Keto Diet Cheesecake!

It is sweet, creamy, satisfying and can stay in the fridge for up to 5 days. (maybe more, but mine have never lasted that long) The absolute best thing about it though?

It is good for you!

If you’ve been looking into the Keto diet, but are worried about your crazy sweet tooth, or how to stay satisfied, you are not alone!

But if done right, you won’t even feel the hunger or miss the sweets like you do in many other diets. For me, doing it right meant having cheesecake.

This is my Easy Keto Cheesecake Recipe. Then I top it off with homemade whipped topping.

Benefits of starting the Keto Diet

The Keto Diet helped my scale finally move after a year and a half of trying to lose the ‘baby weight’.

I tried everything under the sun, some worked a little bit, but nothing lasted.

The frustrating thing was that my normal eating is not terrible!

I naturally stay away from gluten, and am very conscientious of eating sugar. Eating fruits, yogurt, eggs, veggies, and lean proteins were the staples of my day.

So you can imagine how frustrating it was, when people would tell me “Don’t diet, just have a healthy, balanced lifestyle.”

Yeah well... that plan has never made me lose weight.

Never.

It does keep me from gaining weight, but some people need a drastic change in their body in order to lose weight, and that was me.

I would only gain weight (like mad) when I was pregnant. . . and still eating well by the way.

And then I’d only lose weight by doing extreme dieting. (Potato Chip Diet, OMAD, Fasting)

But what worked for my extra weight from my two previous births, didn’t work this time.

I finally heard about the Keto diet and spent 2 months stalking Facebook groups till I thought I could handle it.

Boy was I wrong.

Downside of the Keto Diet:

I’m not going to lie about Keto. The first 2 weeks were HARD!

I was hungry, lacked energy, I didn’t like the food, and at the lowest point, I even threw up!

That was before I understood about the keto flu. . . and about cheesecake. (AKA extra fat)

Now I take my electrolytes, and I make cheesecake to have on hand if I feel weak.

Full disclosure: I ate 7 full cheesecakes in the first 2 months!

And yes, I did lose 20 lbs. I went from 180 to 160.

It was amazing! Clothes that I had hanging unused in my closet for 2 years finally fit!

I learned so much more about healthy eating and hidden sugars.

Now when I reach my goal weight, my new ‘normal’ lifestyle of eating will be more efficient for my body. When that day comes, I will still follow pretty closely the ‘low carb, high fat’ ways of Keto.

UPDATE: I’ve been mostly keto for 2 years, and I love how I feel! I got down to 143 before I got pregnant again. And my pregnancy could not be going better because of how I healed my body in these last 2 years (Morning Sickness)

So how do you start?

Prepare To Track Your Weight Loss: Before starting any diet, I have to track it in order to know if it works, and you should to! Prepare for the Keto flu:

Don’t just jump in without a plan. Have your electrolytes, fat bombs, vitamins. . . and of course, your cheesecake all ready to go when you start.

My sister started the Keto diet 2 months after me, and she only had ONE day of Keto Flu, because I had prepared her so well. 😉

Don’t count calories at first:

I know there will be some disagreement in the Keto world about what I’m going to say.

However, this is my story, and I’m sharing what worked for me.

At the beginning, when I’m trying to get into Ketosis without losing energy, I don’t count my calories and I’m slightly forgiving on my carbs.

What that means is that I will eat way more fat bombs or slices of cheesecake than normal to get me through the transition. And once there, I can focus on my calorie deficit.

Practice some meals first:

I cannot tell you how much this would have helped me.

I decided to start with easy to make things.

Like hard-boiled eggs and salad. And although I do eat those foods without too much of a problem, they aren’t my favorites.

And deciding that they would be my staple food for 2 weeks was a bad idea.

When I started feeling weak and my body was screaming out for sweet and satisfying food, salad and eggs became nauseating to me.

It all seems easy to me now, because I slowly incorporated new cooking skills into my regime out of necessity.

But when I just started, and I was weak and hungry, the idea of learning a new cooking skill on top of cooking unusual food was too much for me to handle.

Pick some hearty good Keto recipes, and then try them out.

I made this Beginner Keto menu for my sister. It uses only one kind of meat (ground beef) that you can cook once, and put into a bunch of different dishes. It helps to have a plan.

Commit to not cheating for 30 days:

Reading about how hard it was getting into Ketosis, and how easy it was to get kicked out, made me terrified of putting the wrong things in my mouth.

I started it a month before my anniversary, and I promised myself I would keep it going till then, and then see how I liked it.

And it can be hard.

You don’t really know how often people offer you food until you have to say no ALL. THE. TIME.

But give it 30 days.

That will give you a really good idea if Keto is right for you.

And there are a bunch of different versions, low carb, strict keto, lazy keto, clean keto, dirty keto, etc., that if you felt a need you could wander around in the area a bit.

But only after you have a solid 30 day knowledge of what the fundamentals of Keto mean and what it can do for your body.

The only way I found to keep completely on track, was to have a daily weigh-in and to check off whether I was committed to my diet the day before.
