I took a challenge to eat Chia seed pudding every day for two weeks, and lost about 5 pounds! (check out the chia seed challenge and results here!)
I started out following some online Chia seed recipes Like this one for Pumpkin chia seed pudding, which was really, really good.
And I also just tried putting chia seeds in juice as a take-along drink. Not bad, but wasn’t filling.
After I ran out of pumpkin chia seed pudding (it lasted 4 days), I rummaged around my cupboard to find what other kind of puddings I could make. And voila! leftover Peppermint extract from the holidays caught my eye! Plus a lady in the challenge had already mentioned trying chocolate and mint. I’m not interested in a chocolate chia pudding, but cool, vanilla peppermint was just my style. Plus there are so many health benefits of adding mint to your diet! (Check out this cool article about it)
I loooooooove vanilla mint. I looooooove vanilla peppermint even more!
So I threw together my first try, and it was eye-rolling to the back of my head good.
I made it the next day, but I put waay too much peppermint in it. . . i loved it anyways.
The next day, I tried again, and kept track of what I put in the recipe, and it was perfect.
So here it is.
My Peppermint chia seed pudding recipe.
2 C. Unsweetened coconut milk
2 tsp. Vanilla
1/3 C. Chia seeds (get some here)
3 tsp. Monkfruit/erythitol mix (I use this kind)
1/4 tsp. Peppermint extract
(I am also a fan of 1/2 tsp for a really minty taste)
Mix together all the ingredients in a container that has a lid. set aside for 15 minutes, then stir again well, so that the chia seeds don’t clump.
Then wait another 30 minutes, then enjoy!
I personally like my chia seeds to soak overnight. so I make them after dinner so that it is ready for the next day.
I eat mine either as a dessert or afternoon snack.
My kids like them so much, that I have to make extra for them as well. I’m not complaining, because chia seeds are high in fiber, anitoxidants, and omega3s, so I know they are getting some good nutrients with it
The chia seeds last for 4-6 days, so making extra is always a good idea.
And of course, it’s Gluten-free, Sugar-free, Dairy-free, Low-carb, Keto, and Paleo! how can you beat that?!
