Nothing beats how incredibly fast you can be eating Keto Candied Pecans by using the air fryer!
Ever since getting our instant pot/air fryer combo a couple of weeks ago, our lives have changed for good!
Not a single day has gone by that we have not used the air fryer for something. And I promise, getting the biggest size there is was worth every extra penny.
We had gone to Costco and stocked up on some keto basics, like nuts. SO CHEAP THERE!
And now I have this large 2 pound bag of pecans, and an airfryer that i’m obsessed with. So it isn’t surprising that my mind went to candied pecans.
(I was inspired by this non-keto recipe, in case you want to make both a sugar version and a sugar-free version)
It did make a bit of a mess in the fryer because hardened sugar is, well, hardened. So the sooner you clean out the basket, the easier it is to clean. I Absolutely need a kitchen brush to get the holes in the basket – It’s A MUST!
So because of this, i’d suggest making a bunch of servings right after another so it will last a few weeks. Because believe me, you’ll want this around for quick snacks over and over again.
How to make Candied Pecans
It takes:
Egg whites
Brown sweetener
Granulated sweetener
cinnamon
Salt
Vanilla,
and of course Pecans.
The Egg white is the hardest part (not that hard). You have to whip it with the water and vanilla till it get white and frothy. this can take a little arm work, or use an electric beater, which only takes moments.
Then fold in 1 pound of pecans, and afterwards mix in the sweetener/cinnamon in, and then toss it into the airfryer. Set it for 300 degrees for 15 minutes (opening and stirring the pecans around every 5 minutes)
When it’s done, pour it onto some parchment paper and let it cool for about 5 minutes. And then it’s ready!
I would highly recommend separating it into servings in airtight containers right away, because if you don’t, you could find yourself eating the whole pound of the keto candied pecans! (don’t ask how I know).
Here below is the cinnamon (fake) sugar pecan recipe! Keto on!
Keto Candied Pecans In The Air Fryer
Ingredients
- 1 pound of pecans
- 1/2 C. swerve, brown
- 1/2 C. Erythitol, granulated
- 1 Tablespoon Cinnamon
- 1/4 Teaspoon Salt
- 1 Egg
- 1 Tablespoon Vanilla
- 2 Teaspoons Water
Instructions
- Combine sugar substitutes, salt, and cinnamon in a small bowl. Set Aside.
- In a medium bowl, whip together egg white, vanilla, and water till white and frothy (can be done by hand or with an electric egg beater)
- Stir in pecans, then shake in the small bowl of cinnamon sweetener while stirring.
- Place in Air Fryer, then set it 300 degrees for 15 minutes, stirring every 5 minutes.
- Place on a cookie sheet with parchment paper for 5 minutes to cool.
- Eat and enjoy!
