If you think the Chaffle craze was a big deal, wait till you try the Chiffle. Or Chia Waffle. It’s keto friendly, with superfood strength!

Ok. So I have tried a few chaffle recipes – cheese waffles- And they don’t quite agree with me sadly.

As I was going back to making unsatisfying almond flour pancakes, I opened the fridge, and there was my uneaten chia pudding!

You see, I love chia seeds! They help me lose weight, and I feel great taking them (chia diet).

But 9 out of the 10 times I make it, I’m disappointed with something.

  • Maybe the ratio is off,
  • or the sweetener isn’t great,
  • or the quality of coconut milk is wrong. . . I don’t know.

So usually my pudding is something that I just force myself to eat a few spoonfuls a day, but not something I love.

Well, with it hanging out in the fridge, I wondered if I could add it to my waffle mix (birch paleo) that I was making for my kids, you know, adding some sneaky superfood into their dinner. (yes we were having breakfast for dinner).

It went really well, and I decided to try it with my keto 90 second bread recipe.

Failed first attempt at chia waffles.

first I added chia seeds to just almond flour and baking powder. And the waffle did not waffle! it became a crumbly mess that I had to scrape off the inside of my waffle maker and start again.

I had heard that you can substitute eggs with chia seeds (hydrated), so I thought it would work out. But it was clear I still needed a binding agent. So I added an egg, and voila! instant chia seed waffle. . . or the chiffle. . . I’m trying to make it a thing, but it kinda sounds like sniffle. . . so who knows.

Second attempt achieved the chia seed waffle I wanted!

Why put Chia Seeds in waffles?

Have you heard the words, nutrients, fiber, protein, antioxidants, omega 3s? those are just a few of the components that make up chia seeds. So finding as many foods that you can add it to is a win. And these chia waffles are perfect for it!

Are Chia Seeds Keto Friendly?

Yes they are! Chia seeds contain 17 carbs but 14 grams of fiber in 1/4 cup. In low carb or keto diets, where you are counting carbohydrates, you take the carbs and subtract the fiber. So 17-14 is 3 grams. That is pretty impressive.

What’s the big deal about Omega 3s?

I’m so glad you asked! Omega 3 Fatty Acid is a healthy fat that can promote brain health and cellular health.

They don’t call chia seeds a healthy superfood for nothing! So here is the super simple recipe:

Ingredients.

1 serving

  • 1 egg
  • 3 Tablespoons of fine almond flour
  • 1/4 tsp Baking Powder
  • sprinkle of salt
  • 1 Tablespoon of prepared Chia Seed Pudding.

Directions

Whip egg in small bowl, add chia seeds and stir again, add almond flour, then sprinkle on baking powder and salt, mix together till blended. Set it aside while heating up the waffle maker. Oil waffle maker, put in batter, and cook till done!

How to make Chia Seed Pudding.

mix 1/4 C of chia seeds with 1 C. liquid.

I usually use coconut milk. Then add sweetener and flavoring.

For my chiffles, I had banana chia seed pudding, that was flavored with banana flavoring from the baking aisle.

The waffles had a poppy seed like texture, and was pretty great! Add some butter and sugar-free syrup on them, and they are golden.

Was good .. a bit eggy tasting so I added 1 TBS of swerve ‘brown sugar’ And a little lemon extract (cause I made lemon chia pudding) I found delicious
