I took the Gluten-Free 2 Week Challenge, and recorded my experience.
7 Days into being Gluten Free
– I feel really good. i’m down 1 whopping pound, so we’ll see how the next week goes. I had been reading about how important it is to go gluten-free if you struggle with Thyroid. So that is my motivation.
i’m mostly eating corn quesadillas with with leftover spaghetti sauce and cheese, or anything else I can stuff into the tortillas.
I make gluten-free sauce for the family so I can eat it with rice later.
We had a pizza night.
So I bought the kids frozen pizza, but the gluten-free frozen pizza was 10 bucks! And i’m not spending $10 on a small pizza for myself. So I got the Gluten-free personal pizza crusts that were $2.50 for 2. and then I made my own. They were weirdishly edible. . . But the next day I reheated it on the griddle, which made the bottom crispy, and they were really good. So the next time I did it, I baked it in the oven first per directions, then I slid it right onto the griddle to crisp up the bottoms.
And it was much better that way. Just a hint.
10 days in, and I’m down 2 pounds.
How do I feel?
My gut is feeling better, it’s slowly improving from the mess it used to be.
Update on Gluten. a Full 2 weeks!
The last night of my challenge, I went to a “Ladies’ night out” with my church group. They had Catered Pastry Pub. A local restaurant with the BEST croissant sandwiches (or cheese bagel sandwiches, which is what my mom likes…and dang good salads which my dad likes)
I walked through the line and I saw those sandwiches. . . And I really wanted the sandwich, so I put some on my plate. But they had these lettuce wrap sandwiches too, so I grabbed one of those too with a salad.
The whole way walking to my seat I was wondering
“should I eat the sandwich, should I not? should I? shouldn’t I?”
In the end I decided that i’ve been really good about not eating Gluten, so I won’t. So when I sat down, I put the sandwiches on my mom’s plate.
She was like “umm, thanks!?”
I was happy just eating the salad wrap and the salad, because the salads are amazing, I didn’t feel like I was missing out.
BUT, I bit into the lettuce wrap, and it wasn’t a lettuce wrap! It was a green tortilla wrap! which of course, means it was made out of flour (gluten) So then I was like ‘screw it! I just ate gluten, so I may as well eat the good stuff’
So I ate pastry pub sandwiches last night, and it was so yummy! But i’m paying for it today.
Within an hour and a half my stomach started hurting, and it’s been hurting on and off all night and morning. No good.
So it looks like i’m going to stay off gluten for the most part because it doesn’t like my insides. I mean it probably was one of those things that I had gotten so used to an upset stomach, but now that my gut was healing it said “hey, what are you doing to me? I don’t like this!”
I had lost 2 pounds in the 2 weeks, and my bloating has gone down too.
Also, congratulations to me! after I started this challenge, I found out I am pregnant! Once morning sickness kicks in, I don’t know how gluten-free I’ll stay, because I just need to eat whatever it takes to not feel sick at that point.
But when that is over, I will go back to eating Gluten-Free. Which should be just fine for the baby as long as I continue to take really good prenatal supplements.
