90 second keto bread: sunflower seed flour
I’ve been keto for almost 4 years. Or at least I should say that I have been grain-free and sugar-free 90% of the last 4 years.
The one thing that I have had the hardest time finding an acceptable replacement for, was bread!
Some alternatives for wheat flour, which is full of carbs, were almond flour, and coconut flour. People have made quite intricate and fancy recipes, trying their hardest to recreate that dough-like texture and flavor, but the ingredients and/or complex instructions were too much for me. If it wasn’t simple, it wasn’t going to happen.
So I tried almond flour 90 second bread. It was barely edible, but I still made it on occasion. 90 second coconut flour? Super dense, and I could never get the hang of coconut flour.
Sunflower 90 Second Bread
Two weeks ago I tried Sunflower Seed Flour for the first time. And I am hooked! I have had a sandwich with 90 second bread every single day since then!
I bought a small bag to begin with, but half way through the bag, I went ahead and bought a full 5 pound bag. That is how much I loved Sunflower seed flour! The brand I used is called sunflour (which I love!) and since that is easier to write, I’ll be referring the sunflower seed flour as sunflour from now on. . . even though I’m sure other brands work just the same.
I’m going to quickly show you how to make keto 90 second bread while using sunflour instead of almond flour or coconut flour, and then I’ll go into some cool facts about low carb sunflower seeds.
This Keto Friendly Bread recipe is done within 5 minutes, start to finish.
Ingredients:
- 1 Tablespoon melted butter.
- 3 heaping tablespoons of Sun Flower Seed Flour
- 1 large egg
- 1 tsp of Baking Powder.
- a Dash of Salt
In a microwave-safe bowl, melt 1 tablespoon of butter. I have the small, kid bowls from Ikea, and I think they are the perfect size and shape!
whisk one large egg into the butter till mixed well. Add in sunflower seed flour and baking powder, with a dash of salt, whisk together again till well mixed and the dough is almost foamy.
Cook in Microwave for 90 seconds.
Let cool for 30 seconds, flip the bowl over onto a plate and the 90 second bread should fall right out. cut in half, then add sandwich ingredients, and enjoy!

Why Pick Sunflour over Almond Flour or Coconut flour?
Oh, so much to say, and so little time! First, and always the most important, is the taste and texture!
I have two teenagers who have been trying to go gluten-free (at least during the week-weekends are fun days, and don’t count).
Buying gluten-free flour and treats can get expensive, and on top of that, the store-bought bread isn’t very good.
I have never asked them to go low carb like me, but they will try some of my food on occasion.
I asked them both to take a bite of my new 90 second sandwich.
“Wow! This doesn’t taste like anything!”
Now, maybe that doesn’t sound impressive to you. If that is true, you’ve never had to live on diet food.
Sun Flour has such a mild flavoring, that it blends in with any food, and it actually turn the ‘bread’ into a soft, spongy, roll, the perfect chewy texture. The kids would prefer to eat this low carb bread than regular, store-bought, gluten-free bread. So YAY!
To warn you, sometimes it turns slightly green, but it still tastes amazing.
My world has opened up to me again because of this!
I will be making a tuna sandwich tomorrow with the low carb bread, maybe a breakfast sandwich with bacon and avocadoes, maybe french toast. . . all of my bread possibilities are back and I am so very excited!

YAY!!! Bread, y'all !!!
I'm going to experiment with turning this into a yeast bread. The reaction of the baking power with the sunflower seed is what turns the bread green. I'm not certain of the chemistry details.

I don't suppose there is any chance that this recipe might work with egg replacer?

I don't see why not! I have used chia seed gel as an egg replacer before: Mix 1 Tbsp. of chia seeds with 3 Tbsps. of water, wait about 5 minutes or so till it becomes a gel, and it should work just fine.

Thanks for this recipe. I'm really impressed with it. I made my own sunflower seed flour. Just to experiment, I added a tablespoon of mustard oil in place of butter. Very savoury and delicious. It had a super texture too. I'm tempted to sneak in a small amount of marmite next time.
