I found that Baking Spaghetti Squash is essential for my keto journey.

Learning how to bake this low carb Spaghetti Squash proved a little more difficult than I expected.

Raw Spaghetti Squash is HARD! and most directions tell you to cut it in half first before you bake it.

That is what I did at first, and put a few tablespoons of butter in each half to let melt while cooking. . . yum! I could just scoop it out and eat that buttery squash right away!

But as much as I loved it, it was like a mini workout cutting that thing in half, and scraping out the seeds is such a pain!

And I soon started putting off cooking the spaghetti squash because of it. . .

Which means that I would get hungry and ready to eat without my ‘healthy keto meal’ fully prepped. This led to many days of cheating.

So I knew that I just had to make it easier on me if I was going to succeed.

Easy is the Key to any diet!

So I decided to just put it in the oven without cutting it, and just putting the butter in afterwards. And it worked great!

. . . Just ignore my black wristbands, I was pregnant at the time, and it helped with my morning sickness. (I loved spaghetti squash during my pregnancy because of the extra nutrients that it gives- (How I got through morning sickness)

Directions on how to cook Keto Spaghetti Squash:

  • Line baking sheet with tin foil (all squash leak, and their juice is REALLY HARD to clean off of pans! So don’t skip this part)
  • Place Spaghetti Squash on pan and pierce it once with a knife. Make sure it gets through to the middle.
  • Put in oven for 40-60 minutes on 400 degrees. I wait till I can smell the squash, then check it for tenderness.
  • Take it out, cut in half, and scoop out the seeds. and shred it with a fork.
  • Now you can use the cooked Spaghetti Squash for a substitute for any pasta dish.

I use it for creamy tuscan chicken, meaty spaghetti, chicken alfredo, and mushroom-less stroganoff.

A note for those who are trying out keto. Spaghetti Squash is awesome to use, but it does have a slightly higher carb rate (1 cup of cooked, shredded squash is 8g net carbs).

So it is easy to go over your carbs if you don’t pay attention.
