Mushroom-less Beef Stroganoff: Keto and Low Carb Recipe

This Keto Beef Stroganoff Recipe is an easy, hearty family meal.

My mom is allergic to mushrooms, and we were always on a budget, so couldn’t afford anything fancier than ground beef, but that didn’t stop her from making her own version of Beef Stroganoff.

We always called this recipe stroganoff, and as I got older and found out what stroganoff really was, I realized my mom’s recipe was not even close to traditional stroganoff. . . But it was still delicious, and still worth sharing to the world!

(Her version is pretty much like mine, except she used cans of cream of chicken soup and sour cream instead of chicken broth and cream cheese.)

Gluten-Free Keto-Friendly, Mushroom-less Stroganoff

This recipe is less ‘by the book’ and more ‘to taste’ like all good homemade recipes are. But I will try my best to give measurements.

Ingredients.

  • 2 lbs. Ground Beef
  • 1 Onion, diced
  • 1 Green Pepper, diced (opt)
  • 2 Cups. Chicken stock (I use better than buollion, and you’ll see why later)
  • 1/2 Block Cream Cheese
  • 3/4 tsp. Xanthum Gum
  • 1 Tablespoon Garlic Powder
  • 1 Tablesoon Onion Powder
  • Salt/pepper to taste
  • 2 Tablespoons Worchestershire sauce
  • 2 tsp. Thyme
  • (1 tsp. Balsamic vinegar (opt).
  • mushrooms (opt.)

Directions:

Cook the ground beef with the diced onions and diced peppers. drain the fat out of the beef.

(I precook a bunch of ground beef and seperate them so I can have quick meals later)

Add the chicken stock (if you use bullion or better than bullion, I make it with broth with ‘extra’ taste (so 1 1/2 cubes of bullion to 1 cup of water).

sprinkle the xanthum gum and stir while bringing to a boil. Add in seasonings to taste.

Once the sauce thickens, turn the stove off, and put the cream cheese in and stir quickly. you’ll want it to melt into the sauce, not curdle.

Best Practice would be to have softened cream cheese and mix some of the warm sauce into a bowl with the cheese first, then put that mixture into the saucepan. But as you can see by the video, I’m pretty lazy. and it hasn’t curdled for me yet.

once it’s all mixed together, taste it again and add a little bit more of what is needed to make it to your liking.

Notes:

The original recipe only used garlic powder, salt, and onion powder, But I found that I LOVE to add thyme and worcestershire sauce to pretty much any ground beef recipe. It gives it a richness of flavoring that you can’t get with anything else. After I added everything one more time, I added a bit of balsamic vinegar to see if I liked it. And it tasted ok in it.

It’s even possible to put mushrooms in this dish. But I’ve only done it once.

I used spaghetti squash to go with the keto beef stroganoff. But It also works with noodles and rice.

My daughter is gluten-free, so we usually make it with rice for her.

I’m not the greatest of all cooks, so I can promise you, that any recipe I make, are actually pretty simple to replicate.
